Our cheesemaker is a second generation immigrant, who has been making cheese for over two decades.His father immigrated to the US from mexico and started making cheese out of his kitchen. Our partner works very hard to expand his father’s legacy. He works 16-hour days, 6 days a week and works diligently to create the highest quality of cheese. His dedication to his craft is unparalleled. As the winner of several awards from the American Cheese Society, our cheesemaker has become one of the most promising cheese makers in the country. We are really grateful to have him on our team.
Our dairy farmer has been a certified organic farmer for over 20 years, and has been working on a dairy farm for over 25 years. She is truly dedicated and passionate about her craft and cares about the source of her craft. She takes care of her farm and has a personal relationship with the cows; every cow has a name and a special song, which she sings to them. We have had the great opportunity to visit her farm several times. We were always impressed by the cleanliness of the farms, touched by the friendliness of the cows, and amazed by the vast expanse of land the cows can roam in.
