In a large bowl, combine the olive oil, preserved lemon paste, garlic, cumin, paprika, blackpepper, and a pinch of salt. Taste and adjust seasoning as needed.
Add your paneer, onion, and pepper chunks, tossing to combine until everything is well coated.
Marinate at room temperature for 20 - 40 minutes.
To make the yogurt sauce, combine the yogurt, lemon zest, squeeze of a lemon, garlic, dill, and salt and pepper. Taste and adjust. The flavors will meld as they sit.
Add alternating layers of onion, pepper, and paneer to skewers. Either grill or broil on high until everything is well charred and golden brown. Serve with rice, yogurt sauce, and more fresh
herbs.
