Preserved Lemon Paneer Kabobs

Ingredients

  • 1 block Sach Paneer, cut into blocks
  • 1 large red onion, cut into chunky petals
  • 3 - 4 long hots, sliced into chunks (or bell pepper)
  • 3 tbsp olive oil
  • 2 tbsp preserved lemon paste
  • 2 cloves garlic, finely grated
  • ½ tsp ground cumin
  • ½ tsp ground hot paprika
  • Freshly ground black pepper
  • Salt to taste
  • Dill and Parsley, to serve
  • Rice, to serve

Yogurt Sauce (optional)

  • ½ cup whole milk Greek yogurt (or any thick plain yogurt)
  • Zest of ½ lemon
  • Squeeze of a lemon
  • 1 small garlic clove, grated
  • ½ tbsp dill, finely chopped
  • Black pepper
  • Salt to taste
