Crispy paneer salad

Ingredients

  • 1 block Sach paneer
  • 2-3 tbsp neutral oil
  • 1 bunch lacinato kale, very finely chopped (stems removed)
  • 1 small head romaine, finely chopped
  • 1 Persian cucumber, finely chopped
  • ¼ small red onion, finely chopped
  • ½ cup parsley, finely chopped
  • ½ cup pomegranate arils or dried cranberries
  • 2 tbsp crush roasted peanuts
  • ¼ cup fried shallots
  • Squeeze of lime
  • 1 ½ tbsp tamarind concentrate
  • 1 tbsp fresh lime juice
  • 1 -2 tsp honey or date syrup (to taste)
  • 1 tsp freshly grated ginger
  • ¼ tsp chaat masala
  • Pinch chili flakes
  • 2 tbsp olive oil
  • Salt to taste
