Start by making the crispy paneer. Cut your paneer into small cubes and add to a baking tray.
Coat in neutral oil and sprinkle with salt. Broil on high for 2-3 minutes per side, until crispy and golden brown.
Make your dressing by combining everything in a jar. Add the lid and shake until well combined.
Taste and adjust as needed.
In a large bowl, add your kale. Squeeze a bit of lime all over and sprinkle with salt. Using your hands, massage the kale until the leaves are tender and have darkened a few shades. Add your romaine, cucumber, red onion, and parsley. Add dressing to coat and toss until everything is well combined.
Transfer to a serving plate and finish with your crispy paneer, pomegranate, peanuts, and fried shallots.
