Prepare your ingredients, cut paneer into thin slices and cucumbers into matchsticks.
Cook your vermicelli noodles according to the package and set aside.
Make your sauce! Mix peanut butter, sriracha, hoisin and water to a bowl and top with crushed peanuts.
Assemble your summer rolls. Add warm water to a shallow bowl, plate, or pan and dip your rice paper until it softens slightly (usually 2-3 times around in the water should do the trick). Add noodles, paneer, and vegetables onto the rice paper and roll like a burrito.
