Instructions
Cut the paneer crosswise into two rectangles that are each about 1/2 inches wide. Batter is flour, egg, and panko (in that order!)
Fry your paneer slices in hot oil for a couple of minutes on each side until golden brown (about 2-3 minutes per side and set aside on a cooling rack. Season with a sprinkle of salt and garam masala to taste onto fried paneer.
Prep your burger ingredients, toast burger bun, slide tomatoes, avocado, and red onion.
Build your burger! Spread Mayo on bun, add arugula, paneer, red onion, tomato, and avocado and enjoy!
